Overview

The Kitchen Manager ensures that all kitchen operations are executed according to LYFE Kitchen’s Standard Operating Procedures. The Kitchen Manager is responsible for executing a “Chef Inspired” menu in a fast paced, clean, sanitary and safe environment while providing excellent guest satisfaction and maximizing restaurant profitability.

Responsibilities

  • Maintain a safe and sanitary kitchen while maintaining excellent Health Department scores
  • Follow Standard Operating Procedures to ensure the kitchen is clean and organized
  • Coach and develop Heart of the House (HOH) team members to ensure they are executing proper food safety practices, recipes adherence, and ticket time guidelines
  • Order approved food and supplies from specified vendors
  • Ensure proper par and product levels in the restaurant
  • Monitor all products for quality and freshness as they are delivered
  • Write HOH schedules using the projected sales to achieve labor goals
  • Monitor daily sales and adjust schedules to optimize labor costs
  • Conduct line checks before each shift to ensure product quality, proper levels, correct utensils and food safety
  • Conduct weekly inventory with the General Manager, investigate variances, and develop and execute corrective actions
  • Conduct energetic HOH LYFE Lines on each shift to improve kitchen operations and motivate HOH team members
  • Ensure all approved training systems are in place and that they are followed
  • Oversee and validate the training of all new HOH team members
  • Properly train all team members on new menu roll outs, and existing product changes
  • Interview potential HOH and Front of the House (FOH) team members using approved interview guides
  • Provide performance reviews and documentation to improve team member behaviors
  • Monitor FOH operations and speak with guests when acting as the only manager on duty
  • Follow all cash handling policies
  • Follow all LYFE Kitchen’s Safety and Security polices as listed in the “Leadership Resource Guide”
  • Assist team members in executing their duties to ensure guest satisfaction
  • Fill hourly team member positions to accommodate labor goals
  • Communicate to fellow managers, vendors and members of the support center utilizing various forms of technology
  • Fulfill additional responsibilities and tasks as assigned by General Manager and/or members of the LYFE Kitchen support team

  • Have high standards and be able to communicate and follow up on those standards
  • Be able to effectively communicate to a wide variety of people
  • Ability to maintain a professional appearance
  • Ability to handle multiple tasks at one time
  • Demonstrate working knowledge of computers for use in emails, ordering, and cost controls
  • Possess mathematical skills needed to calculate food and labor costs
  • Ability to lead by example and motivate team members

PHYSICAL REQUIREMENTS:

  • Ability to lift up to 35 lbs.
  • Ability to be on feet for long periods of time
  • Ability to work in variable temperatures due to nature of kitchen
  • Ability to move at a fast pace throughout the restaurant
